Lemon Rosemary Ginger Chicken

My Creation. More on the results in the comments. You want to read these before you try this one at home! (This is how I did cook it, not necessarily how I would recommend you cook it.)

1 red onion
2 lemons
lemon juice
2 large chicken breasts
2 small banana squash
med bunch carrots
rosemary
fresh ginger

To make marinade:
1 T lemon juice
1 T rosemary
some slices fresh ginger
Water to cover
Marinade chicken breasts for at least 2 hours

To cook:
Slice all fruits and vegetables thinly
Drain chicken
Combine in crockpot
Add water to cover
squeeze in some more lemon juice
Sprinkle 1 - 2 T. rosemary on top
Cook on high 4 hours or until chicken is done

Drain and serve veggies on the side.

Gah! Way TOO lemony! It sounds scrumptious, but there needs to be some serious tweeking done before I'd serve this to anyone. My major suggestion is use only one lemon. Oh, and don't add any extra lemon juice to the mixture.

In an effort to remedy the problem I cooked more squash and carrots and added them. It is still way to lemony. I may have to just call this one a loss and try again. Sadness.

At Mumsy's suggestion (and in my desperation to make this not suck) I added a large can of Cream of Mushroom Soup to the mixture (not reconstituted). It seemed to really mellow the whole thing out quite a bit, but I'm still not sure. Perhaps I'll try it over rice. I think that just may do the trick.

Sadly, I threw this out today. I tried so hard, but in the end, it was a dismal failure.
