Linguine with Walnut Sauce

1 cup finely chopped walnuts
3 cups soy milk
2 bay leaves
2 cloves garlic, crushed
2 tbsp margarine
3 tbsp flour
1 tsp sugar
salt and pepper to taste
fresh parsley
1 pound linguine

Place the walnuts, soy milk, bay leaves and garlic in a medium saucepan over medium heat and cook, stirring constantly. Just before the mixture boils, remove it from the heat.

Melt the margarine in a large saucepan over medium heat. Gradually add the flour and sugar, stirring until well blended. Cook over low heat for 3 to 4 minutes.

Remove the bay leaves from the sauce, then pour the liquid into the flour mixture and stir well. Simmer for 25 minutes, until thickened. Flavor with salt and pepper.

Cook the linguine according to package directions. Drain well. Pour the sauce over the linguine, garnish with some fresh parsley and serve immediately.
