Lentil Soup

Once again, from that little brain o' mine.

2 cups lentils
4 cups water
1/3 cup marsala
1 cube vegetable broth
3 ribs celery - sliced
2 large tomatoes - chunked
1/2 pound button mushrooms - quartered
1 yellow pepper - chunked
1 med-large shallot - sliced medium-thin
1 bunch green onions - sliced
2 cloves garlic - minced
1 T dry rosemary - crushed
1/2 T dry thyme - crushed
Pepper

Combine all ingredients in crock pot. Cook on low for 8-10 hours or until lentils are tender.

Note: Lentils don't have to be pre-soaked. Yeah! What this means is, you can cook this on high and get it done faster with less foresight.
